Berry Mimosas

Hello! Today is National Registered Dietitian Day! I thought you would love to celebrate with me, so I came up with something fantastic…mimosas and a superfood-packed salad that I can’t stop eating.

The ingredients for this salad and salad dressing are very simple but packed with antioxidants.

Berry Spinach & Walnut Salad

Packed with nutrition and easy to make! Enjoy this delightful, addicting salad.

Ingredients

  • 4 cups fresh spinach
  • tbsp. red onion
  • 2 tbsp. feta cheese
  • 5 walnuts chopped
  • 1/2 cup fresh berries

Salad Dressing

  • 1/4 cup olive oil
  • 2 tbsp. red wine vinegar
  • 1 tbsp. monk fruit sweetener
  • 11/2 tsp. paprika

Instructions

  • 1. Divide salad ingredients (spinach, red onion, feta cheese, walnuts and fresh berries) into two containers.

    2. In a small container, place olive oil, red wine vinegar, sweetener and paprika. Place lid on container and shake ingredients together.

    3. Drizzle one tablespoon over salad ingredients.

n addition to these superfoods, olive oil is a wonderful healthy fat that is a staple in the Mediterranean diet, which has been studied significantly and shown to have many health benefits.

Each one of these ingredients “scream” heart health along with the reducing inflammation and cancers. (I know, interesting choice of words but it’s true 😂).

This salad is so good, it’s Panera-good. That’s at the top of the list for me.

Now, crack open the champagne for this delightful sip, berry mimosas! It’s really a sight. 😍

Super simple, just puree one cup frozen (slightly thawed) mixed berries with 1/2 cup water. The frozen berries are the ones with blueberries, blackberries, strawberries and raspberries. We are getting a boost of mega-antioxidants with our champagne.

Ingredients

  • 2 cups berries, frozen
  • 1 cup water
  • 1 bottle champagne

Instructions

  • 1. In a blender, combine berries and water.

    2. Fill wine glass with half the berry mixture and top with champagne.

Make more berry mixture for more servings!
