Happy Valentine’s Day! Whenever I say the phrase, “Treat yo’ self” I think of Parks and Rec 🤣 Anyone know what I’m talking about? So funny, that sounds like a good show to watch. Anyway… I hope you all have a wonderful Valentine’s day and cheers to enjoying this amazing, simple side that is also really good for you, especially your heart! ❤️

Berries, peaches, kiwis and an apple! And you don’t have spend a bunch of extra money on out-of-season fresh fruit, you can use frozen for this recipe. Frozen fruits are picked at their prime nutrition.

 

Here is the monk fruit that I used… Monk fruit is a natural sweetener, like stevia. As with any natural or artificial sweeteners, there are side effects: gas, bloating, other various reactions.

Personally, I find this sweetener easier to digest, but that’s just me, everyone is different.

Fruit Salsa

This super simple, nutrition-packed fruit salsa is bursting with flavor.

Ingredients

  • 2 cups frozen berries, thawed
  • 1 cup frozen peaches, thawed
  • 2 kiwis, chopped
  • 1 apple, chopped
  • 1 tbsp. monk fruit sweetener
  • 1 tbsp. agave nectar

Instructions

  • 1. Place all chopped ingredients in a bowl. Add sweeteners and mix. Cover and chill in the refrigerator at least 15 minutes for flavors to combine.

Notes

Serving size: 2 tbsps.

My daughter wanted to help make this salsa, so why not, especially when I do not even use a knife to chop the fruit. She was very proud to tell everyone at dinner she made it all by herself.

I set the frozen peaches and berries to thaw in the frig or on the counter. Then I placed the fruit on a cutting board and easily chopped with a bench scrapper. This is a great, kid-friendly way for kiddos to safely chop up fruit.

 

I used Stacy’s Cinnamon & Sugar pita chips. They are hard to find. I found mine at the Hy-Vee HealthMarket. In times when I can’t find them, we use graham cracker.

I’m a big fan of Stacy’s pita chips. 1) Because she has the same name as me and spelled correctly. 2) About 10 years ago, she sent a variety pack of pita chips and it was addressed To: Stacy, From: Stacy…how cool is that?! Just because I had the same name she found me and mailed me goodie package. You had me at Stacy’s pita chips! 💗😂
